Beetroot feta slider
Beetroot raw ( Squeezed ) 340 gm.Walnut 70 gm.Feta Cheese 50 gm.Salt 3 gm.Roasted Jeera 3 gm.Butter 10 gm.Home made mayo 10 gm.Hydroponic ice berg lettuce 3 gm.Broiche sliders 2 nos.
Patty
Take the beetroot, boil it with skin and let it cool,Once cool, peel, and grate the beet. Squeeze out any extra water. Add chopped walnuts, salt and roasted and cumin (Jeera) seeds, mix well. Add the feta chunks.Check for seasoning. Make patties, 50 gm aprox. shallow fry in olive oil. Cook well on both sides. Keep aside.
Sliders
Take two Brioche sliders, slide horizontally, apply butter on the cut part, and pan grill on a hot plate. Toast well for a nice golden colour.
Assembly
Take the heel of the toasted slider buns, apply home made mayo , the place the lettuce leaf and the beetroot feta patty. Top it up with, garnishing with brown onion and roughly chopped sultanas.
Aloo Chaat Slider
Boiled Potato 900 gm. Salt 0.003 gm. Ginger Chop 0.02gm. Roasted Cumin Powder 0.005 gm. Black Salt 0.008 gm.Green Chilly Chopped 0.02 gm.Coriander Chopped 0.03 gm.Amchur Powder 0.003 gm. Anardana Powder 0.003 gm.Mint 0.03 gm.Bread Crumb 0.05gm. Mint chutney10 gm, Saunth chutney 10 gm, Sliders 2 nos,Butter 5 gm,Brown onion 5 gm,Sultanas 5 gm
Aloo tikki
Take potatoes, boil and let the water evaporate. Peel and mash thoroughly.To the mashed potatoes, add finely chopped ginger, salt, roasted cumin powder, black salt, chopped green chili, Green Coriander chopped, Amchur powder, Anardana powder, fresh chopped mint and a bit of bread crumbs. Check seasoning.Mix well all these and make into patties. Pan fry on a griddle like the traditional Aloo Tikki and keep aside.

Assembly:Take the heel of the toasted slider buns, apply the mint chutney and saunth chutney, place the lettuce leaf and the Aloo patty. Top it up with mint and saunth chutney, garnishing with brown onion and roughly chopped sultanas.Finally place the toasted crown on top and serve.
