Atlantis Dubai and Major Food Group to Bring Iconic Carbone to Atlantis The Royal

One of World’s 50 Best Hotels to welcome internationally renowned restaurant to its dining collection in Q1, 2025

Atlantis Dubai is set to collaborate with the acclaimed luxury hospitality brand Major Food Group to bring the renowned restaurant CARBONE to Atlantis The Royal in the first quarter of 2025. Vanity Fair has dubbed CARBONE “the most celebrity-studded restaurant on earth,” and this global phenomenon will introduce its world-class, New York-style Italian cuisine to Dubai for the first time.

When the original CARBONE opened in downtown Manhattan over a decade ago, it was celebrated as an instant classic, infusing the high-end dining scene with new energy and soul. The New Yorker praised the restaurant’s food as “absolutely perfect,” while the New York Times described the concept as “a fancy red-sauce joint as directed by Quentin Tarantino, possessing a technical prowess that can make you giddy and an instinct for sheer entertainment that makes a lot of other restaurants seem like earnest, unimaginative drones.” Since then, CARBONE has expanded globally, solidifying its reputation as one of the most influential contemporary restaurants worldwide.

The cuisine at CARBONE pays tribute to the legacy of mid-century New York-style Italian restaurants, elevating classic dishes like Caesar Salad, Linguini Vongole, Chicken Scarpariello, and Veal Parmesan through exceptional culinary techniques. The Dubai menu will feature these famed signatures, including the sensational Spicy Rigatoni. Guests will experience the charm of 1950s New York, with tuxedo-clad service captains serving in a sprawling dining room adorned with velvety jewel-tone nooks, damask-upholstered walls, Venetian glass mirrors, fine artwork, and a vibrant terrace.

CARBONE Dubai will be the ninth location in Major Food Group’s (MFG) roster, joining outposts in Hong Kong, Las Vegas, Miami, Dallas, Doha, Riyadh, and two in New York City. Founded by Mario Carbone, Jeff Zalaznick, and Rich Torrisi, MFG now operates over 50 restaurants, bars, private clubs, and hotels. The luxury brand is renowned for creating glamorous spaces that appeal to a wide audience—from neighborhood regulars to prominent figures in media, business, and entertainment—thanks to their meticulous execution, peerless hospitality, and designs by leading experts in the field.
