Pan-Asian and Pacific inspirations make for playful, fun-in-the-sun fare
Shangri-la Hotel, Tokyo recently announces new seasonal menu items coming to The Lobby Lounge from 1 June to 31 August (exclusions apply), each designed to keep guests cool and refreshed during the sultry days of summer.
Popping Melon Kakigori
Every summer, The Lobby Lounge creates a luxurious version of Japan’s classic shaved ice dessert. This year, the chef took inspiration from childhood favourites like melon soda and crackle candy to create an exuberantly fun treat with grown-up flavour. Half a muskmelon filled with almond jelly, black tapioca, milk ice cream and a glacier of melon shaved ice forms a fruity base, while cubes of fresh muskmelon, cantaloupe and aiyu jelly add toothsome texture. Finally, the confection is topped with crackle candy, whipped cream and white chocolate for an explosion of flavours and textures. Juicy bites of melon complement the softly melting ice and the surprising snap-crackle-pop of the candy gives the more subtle traditional flavours like almond jelly and whipped cream a boost. It’s an undeniably original concoction sure to be the centre of conversation and easily shared with a friend for a perfectly refreshing dessert time.

Tropical Hawaiian Afternoon Tea
Shangri-La Hotel, Tokyo’s popular afternoon tea pairs more than 20 types of tea with regularly changing seasonal fare, earning it dedicated fans who come back to try each iteration. This summer, Executive Pastry Chef Naoya Okamura has conjured the relaxing atmosphere of a beach resort in the centre of Tokyo by drawing on the flavours of Hawaii. Tropical fruit sweets and savoury items inspired by Hawaiian classics like Spam musubi and poke will transport diners to that Pacific paradise.
The sweets selection includes creamy mousses made with fresh pineapple and passion fruit, watermelon-striped macarons rich with the aroma of ganache, and cookies blending the perfectly matched flavours of chocolate and coconut. The filling savoury menu includes bite-size sushi balls of Spam and vinegared rice, poke salmon avocado tarts, and potato and corned beef sandwiches on piquillo pepper bread. Savour the aloha feeling high above the Tokyo cityscape for a mini summer escape.

My Asian Somen
During the long, hot days of summer, guests often ask for chilled somen noodles. The Lobby Lounge is now granting that oft-repeated request by adding My Asian Somen to the menu. At first glance, it appears to be served in standard Japanese style with myoga, ginger and leeks ready to be added to the tsuyu dipping sauce, but there are also options from further afield including cilantro, lime and fish sauce for truly customisable flavour, as well as a coconut lemongrass chicken salad on the side for a pop of South East Asian flair. This summer, guests can make this popular Japanese soul food into a dish all their own.

Tapioca Cocktails
Exuberantly fun tapioca takes an adult turn in three summer cocktails sure to please dedicated mixologists and casual drinkers alike. The strikingly presented Blue Market is sweet on the eyes and the tongue with a blend of gin, cucumber, melon, and mint. The smoky whiskey-based Peat-Up Milk Tea is a more grown-up version of a classic Alexander. And the lovely Cocoberry Milk combines the tartness of raspberries and the sweetness of coconut in a lassi-style cocktail.
